India is the world’s largest producer, consumer and exporter of chillies in the world. Chillies are valued principally for their high pungency and color. India is the largest consumer of Chilli in the world. Around 90% of India’s production is consumed within the country.

Chilly is an essential ingredient of curry. Curry is characterized by tempting colour and titillating pungency. Both are contributed by chilly. In curry, chilly is used as a paste, powder, broken split or whole form. Red chillies are very rich in vitamin C and pro vitamin A. In addition, they are a good source of most B vitamins, and vitamin B6 in particular. They are very high in potassium and high in magnesium and iron. Their high vitamin C content can also substantially increase the uptake of non-hemi iron from other ingredients in a meal, such as beans and grains.
